What’s that you say, gone again?  How can this be?!  He’s only been home for a week!  Crazy!

No really it’s ALL good!  Country Boy headed out for a little 4 day flying weekend so I get to spend some quality time with my other boyfriends….

That’s the way that I get through all the time we’re apart… I utilize that time to spend with the boys so that when Country Boy gets home from a trip on the road I don’t mind taking a day or two away from the ponies to spend doing things men like to do :)

Sweet and Spicy Porkchops

In an effort to continue posting I’m going to leave out excess photos and just post recipes with finished products.

Sweet and Spicy Porkchops

Marinade:

1/4 cup soy sauce

1 clove of garlic -finely chopped

the juice of half a large lemon

1 tbsp of Siracha (or other chili sauce)

1 tbsp brown sugar

Marinate the chops for 8-12 hours.

Poor the marinade over the chops as they are cooking on the grill, but never use marinade as a sauce unless you heat it on the stove to kill any bugs :)

Grill until cooked through, about 15 minutes a side at medium low heat.

I cut up some zucchini and peppers along with some white mushrooms.   Grilling veggies is super simple; olive oil, salt and fresh cracked pepper…. That’s all it takes!  Grill them until you get great grill marks and you’ll be ready to rock.

I’m so sorry y’all,  I have several posts that I’ve wanted to get on the blog for you all.  I’ve been cooking a ton since Country Boy came home.  The unfortunate issue is that I have used all of my media space that comes with a “free” blog.

Now that’s partially my fault for uploading full size photos.  I have been in the extremely painful process of trying to resize them in order to have more usable space.  This is not going well…. WordPress is assisting me, although not as throughly as I had hoped.

I am also coming to the point where I need to make a decision about self-hosting for the blog.  I told myself that I wouldn’t worry about that until I had successfully blogged for over a year.

However, with my style of blogging, and my pension for taking TONS of photos of my cooking this transition may come sooner rather than later.

Please bear with me I promise to fix this as quickly as I possible can.

Is through a big old steak dinner.

Especially when he’s just come home from a deployment where he’s been forced to eat the same things over and over in a chow hall.

But first you have to restock the refrigerator.  Oh come on girls we all do it, you go back to eating yogurt and cereal for dinner or just heating up a lean cuisine.  Because really if there isn’t anyone else to cook for it kind of takes the fun out of it.

But it’s good to be back y’all, and Steaks and Twice Baked Potatoes are a great way to make a come-back.

First things first, you need to select some beautiful pieces of of meat… I chose a rib-eye since they are Country Boy’s favorite.

Add some Worcestershire Sauce for the tenderizing and for the flavor… then throw them back in fridge to marinate for a few hours.

Take the meat out of the fridge and 3o minutes to an hour before it’s time for the meat to go on the grill.  Meat that is room temperature will cook more evenly than super cold meat will.

Add your seasoning when take the meat out of the fridge.

We like the McCormick’s Steak Seasoning.   You can always make your own blend… and we will when we run out of this bottle, eventually :)

Then the steaks go on a medium high grill for about 3 minutes a side… or however long you need to get the cook you like.  I like rare.

Don’t those look beautiful.  Nice red center and a great flavor.

Now plate up that steak with all your other goodies, I made twice baked potatoes, roasted brussels sprouts, and acorn squash.

Pour a glass of wine,

I chose a Byron Pinot Noir for this steak dinner.  Now grab your man and have a beautiful dinner together.

Look who it is?! 

My Country Boy is finally home.

This deployment was a bit shorter than his last one, but it seemed to drag on forever!  I think it’s because we have so many things to do and I just wanted him home so we could get to work.

Sorry Y’all, that’s why I’ve been avoiding the blog… because I knew he was coming home, and eveything I was doing was to get ready.

We really have to be careful about post trips like that on “social media” because the last thing we want to do is put them in danger.

But he’s home safe and sound so we can get back to our regularly scheduled programming :)

It’s been a crazy couple of days, (like the fact that I had BEES in my house) but now that he’s home I’m sure everything will settle down.

Riding Therapy

I needed it so badly today.

Work is trying my patience these last two days and I needed to get out and get some fresh air and see my boys.

Horses may not be cheaper than therapy, but I can assure you they are a WHOLE lot more fun!

Goose has to be the oddest horse I’ve ever had to deal with.  He is such a great horse, but he just can’t deal with just walking around and hanging out… It took me a solid 30 minutes just to get him to jog around slow and controlled, yet the second a put him into a lope I was able to drop him off on a loose rein and he went around happy as could be.

I wish he could just understand English so I could explain to him things could be so much easier if he would just CHILL!

“Seriously dude?  This could be SOOO much easier for you.”

After my ride I headed home to meet the plumber, who’s actually our neighbor across the street.  He is going to fix the shower head in our spare bathroom, some of the seals are dry rotting.  He also showed my some tile work that he’s doing as well.  But my favorite part of the meeting was that he showed me how to fix a little issue that I am having with with table I built for Jamie and I’s first anniversary.

He’s even going to lend me the clamps to straighten the one side out.

I have so much more I want to tell you all, but I can’t :(
